Ingredients:
2 cups ground melon seeds (egusi)
1/2 cup Liorga soybean oil
1 large onion, finely chopped
1 pound assorted meat (beef, goat, or fish)
1 cup meat or fish stock
2 cups chopped spinach or bitterleaf
Salt and pepper to taste
1 teaspoon ground crayfish (optional)
2 tablespoons ground pepper (optional)
Preparations:
- Sauté Onions: Heat Liorga soybean oil in a pot over medium heat. Add the chopped onions and fry until translucent.
- Fry Egusi: Add the ground egusi seeds and fry, stirring constantly, until the oil separates from the paste and the egusi turns a light brown color.
- Add Stock and Meat: Pour in the meat or fish stock and bring to a boil. Add the assorted meat or fish, ground crayfish, and ground pepper. Simmer for 20 minutes.
- Add Greens: Stir in the chopped spinach or bitterleaf and cook for an additional 5-10 minutes. Adjust seasoning with salt and pepper.
- Serve: Serve hot with fufu, pounded yam, or rice.
